My wife & I chose the table d'hôte menu that offered an amuse bouche of an artfully presented oyster followed by a choice of soup or salad, a choice of main & a dessert. I opted for the chilled cucumber & mackerel soup & beef tartare with frisée salad. My wife had the beet & plum salad & the sea bream in a creamy corn sauce. The dessert was a light preparation of melon & summer fruits, olive oil cake & meringue. The espresso was the perfect end to the meal. We received a warm welcome on arrival even though we arrived an hour before our reservation. The service was excellent, as always.

First two trips were 5 stars & the third one about 3. The new dishes (fish over gnocchi & veal) were disappointing. Too much salt & sauce but not flavorful at all. The dish for the veal was cold so the food got cold quite quickly. They wanted to remake it but we were already quite full after a couple of bites. Got a dessert for free for the disappointing experience. Though I had hoped I ordered our usual choices instead.
Edit: our 4th trip was pretty good (though I didn't like the ravioli as much. The lobster vol-len-vaut dish was very very good, not sure that was the right spelling though).
Edit: our 5th (& certainly the last) trip was a disaster. The vol-ent-vaut was cold, scallop had about twice the amount of salt compared to previous times. I asked them to redo the first dish but not the second, already too tired to wait. Really really bad food this time. I think on average this place deserves at most 3.5/5. More like 3.
Service was above reproach. Very nice atmosphere.Main course of quail was an appetizer size at best. Overall a very nice experience.
Quality & creativity you would expect from a Michelin-star restaurant!
What a great experience. The food, wine & service were all amazing. We had the five course meal with the wine pairing. Everything was amazing. We especially loved the foie gras & the quail. The wines were all perfectly paired & very tasty.
Pricy but worth it. If you want to have a gourmet experience that's the place to go, get the 5 or 8 course meal with agood bottle of wine. Excellent for special occasions, first dates or any occasion where you want to impress. The service is very attentive & the food is heavenly. I strongly recommend!

Très belle expérience sur l'heure du lunch au Bouillon Bilk! Nous avons pris la table d'hôte à $60 & nous n'avons pas été déçu. L'amuse bouche au poisson était très bon, la soupe de carotte juste incroyable, le canard bien cuit & tendre & le dessert très rafraîchissant! Je recommande grandement pour un bon & beau moment gastronomique!

Location is a bit strange, not what you would expect for a high end restaurant. Service was excellent as was the food.
Bouillon Bilk is a beautiful fine dining spot in downtown Montreal with a modern & elegant interior design. The ambiance was perfect for a relaxed & upscale meal.
We highly recommend making a reservation in advance, as it's a popular spot. While they offer a tasting menu, we weren't too hungry, so we ordered one appetizer & one main course each & both were absolutely delicious.
A great place for a refined dining experience in the city.
Used to be a five star review in every category for me five years ago. I recently brought a friend here & felt embarrassed of my choice. Quality of food has gone down hill tremendously. Presentation was ugly & food execution was sloppy. We ordered same thing & the plates came out all looking different. Some had more food in it others significantly less. Pictures taken 5 years ago looked like refined art; now they look like an intoxicated homeless person is doing the cooking. Cheap interior decor choices especially the tile. Bizarre ceiling treatment heightened noise level . Service was bit rough & clientele wearing sport shorts & flip flops. Nothing says class nor high end except the bill. Some say the Michelin grading was too strict toward Montreal restaurants but in my opinion they were accurate & honest. I should've spent $550 elsewhere.
Comparing with other experience around the world with the same price range, the food is subpar from what you would expect. The gastronomic experience is not impressive (taste & visuals). You would make your own ambiance with your friends rather than the place making it for you. About 350$ for 2 persons having 5 services + some wine. One last thing I was sick after the meal & my partner was bloated...
Excellent & exquisite. Ensure you are with good company as the ambience compliments the most suitable.
