I thought the food was executed very well. Almost perfect. Would have like to have seen a little more creativity & pushing the envelope, but there's never anything wrong with keeping it simple & executing it perfectly. I just wasn't really wowed by anything I had...apart from the foams & broths. The front of house service however, leaves VERY little to be desired. There were multiple times between courses where my guest & I were waiting for silverware as our food sat on the table. Also I had gotten up to use the bathroom & expected to find my napkin folded over my chair like most fine dining establishments, that was not the case. & in the most infuriating example, when my guest was looking for a white wine & wanted the white burgundy, the server repeated said that was more expensive. I'm having an 8 course tasting, I know how much the wine is, & I don't care. I've dined in many fine dining establishments, for work, academia, & pleasure. All-in-all, I think the food is great, but everything else is mid...I don't think I'll be returning, nor will I suggest this place to anyone else.

We booked a table ahead. We were a group of three.
We all ordered the 8 course tasting menu. I also ordered the 7 discovery pairings. The 8 course tasting menu was supposed to be for people who came after 8pm but they made it available for us even though we were there quite early (5.30pm).
Absolutely loved each course! They all have rich flavors. The mushrooms were really tasty, with the right amount of crispy. Among the first five courses, scallop & quail were my favorite. For dessert, the cucumber ice cream was really refreshing. Definitely recommend! For the discovery tasting, I love the last ice cider the best. Fruity flavor but not too sweet. Perfect balance
Le repas était excellent : des plats raffinés, bien exécutés, avec de belles saveurs. Le service aussi était impeccable - chaleureux, attentif, professionnel. Le sommelier était compétent & amicale.
L'ambiance, elle, est assez froide : un décor minimaliste qui manque un peu de charme.
Là où ça accroche vraiment, c'est sur le prix. On parle de 460 $ pour deux personnes, sans bouteille de prestige ni excès. Pour ce montant, on s'attend à une expérience culinaire exceptionnelle de bout en bout, or on a déjà mangé aussi bien (& parfois mieux) pour deux fois moins cher. Ce n'est pas que le Bouillon Bilk ne soit pas bon - c'est un très bon restaurant, aucun doute là-dessus - mais le rapport qualité-prix est difficile à justifier.
En résumé : excellent repas, excellent service, mais facture salée pour une expérience qui, bien que très agréable, ne nous a pas entièrement transportés.

Expérience toujours des plus agréables au fils des ans. Qualité, service impeccable & nourriture de haut standard. Un endroit à recommander aux plus exigeants BRAVO!!
Walked in, had the tasting menu at the bar. Amuse bouche was extra, would skip it next time.
Souper en amoureux tout simplement parfait. Le crabe & le flétan étaient sublimes.
