The meat is served shredded, minced, and occasionally sliced. It is cooked over a wood fire and/or charcoal and offered with a vinegar-based sauce for dipping.

Favorite cuts of meat on sharing platters include beef brisket, homemade sausages, ribs, smoked chicken, and/or pulled pork. The many side dishes that make all the difference are not to be overlooked, such as mac and cheese, cornbread, coleslaw, poutine, grilled corn on the cob, and smoked beans. 

We strongly suggest that you go on an empty stomach in the company of hungry people, because these are generous dishes to share.
