Originating from the village of Saint-Maximin in the heart of Provence, Nans fell in love with pastry from a young age.
After studying pastry at the foot of the hills of Provence, Nans worked for 12 years in prestigious establishments on the shores of the Mediterranean.
Having arrived in Saint-Henri several years ago, Nans gained various experiences in Montreal's finest pastry shops. The taste for entrepreneurship and the desire to introduce Provençal pastry to his Quebec friends led him to launch his own business to give them a taste of Provence.
As a pastry chef, but also an ice cream maker, chocolatier, and confectioner, Alexis is a jack-of-all-trades who puts his full range of skills at the service of taste.
With over 10 years of experience in prestigious French establishments in the south of France, Alexis set out to discover Quebec and the Saint-Henri neighborhood in Montreal. Leading a team of about ten people within a large Quebec pastry group, Alexis used all his talents to introduce new flavors.
Enticed by entrepreneurship, he joined Nans at "Un Instant en Provence" to introduce French pastry to as many people as possible.

Delicious pastry shop. Strong, quality coffee, excellent service. Strong wifi & ambiance. Truly a great pastry shop/cafe. I came on a Tuesday & it was perfect pace, but too busy but still some others working around me I felt inspired. I got a decaf americano & a suisse pastry. The pastry so so good. It was like a sweetened savory one but in a good way with good balance in flavor...a bit pricey around 8 dollars for one, but was good. The decaf americano was also good. They also make a homemade chai. It's subtly sweet & spicy, good drink as well. Highly recommend!View more

Heard really good things about this place so had to try it for myself. All the pastries we tried were so good. Super fresh & well made. The layers of the viennoisseries are super flaky with a lot of layers which is something I look for. The staff were super nice & welcoming. Wasn't super impressed by the coffee. Never been to Provence but it does seem like it can be a great introduction. Such a great find. Would definitely go back!View more

Unfortunately, it didn't match the expectations built based on most of the reviews here. Pain au chocolat is quite average, not flaky, butter flavour wasn't there. The only thing I liked about it was the chocolate used. There are way better croissants & pain au chocolat in Montreal. We liked the eclaire chocolat but it's over $7, not worth the price in our opinion. We also tried the tiramisu / chou which is over $8. It didn't taste like tiramisu & the chou was nothing special for the price paid. The coffee shop itself is nicely decorated, simple but cute. There are only 3-4 tables & the rest is a long bar with stools. Staff is welcoming & quick to get your order. On-street parking was easy to find & free. Overall, I'm not french but it didn't meet my expectations, one of the things I love about Montreal is the variety of great french pastries & boulangerie so I'm always open to try new places. Also, I found it to be overpriced.View more

While the croissants are exceptional (crunchy exterior, soft airy interior. & rich butter flavour), the coffee was a huge disappointment. I ordered a small almond milk cappuccino & it was so hot that it burned my mouth. When I went back in to inform the barista that it was way too hot, she became defensive & told me that's how it's done - she has to steam almond milk longer to get a froth. Other coffee shops don't seem to have this challenge so it's either an issue with the brand or the handler. Fortunately someone else stepped in & offered a replacement (which unfortunately was also too hot). There are better coffee shops in the city - it's not worth the detour.View more

good croissant & very cute inside. i went on a tuesday morning & it was a lovely spot to have in petit chocolatine & cafe before the day started. chocolatine was pretty good but not buttery enough & a bit overcooked. i would go back to see if it was just an off batch. staff are super friendly & great vibe inside. $5 coffee & croissant is hard to beat.View more

For all you fans of all things French & authentic to French pastries, this is the spot! The flavours are spot on the coffee is a beautiful selection of teas as well as a very Provence atmosphere that takes you miles away. The owners are very kind & very good at service making sure of all the details. Refreshingly devoted to the presentation & quality of food not to mention how spotless clean their kitchen is this place allows me to give 100%. The Pain au chocolat & the fondant as well as anything else you'll have here is not overly sweet nor is it Nutella filled. Again, very authentic.
