Je suis revenu à Hidden Fish pour la 4eme fois le weekend dernier pour fêter ma graduation, & comme toujours ce fut parfait & délicieux !
C'est un des rares restaurants de Montréal où je suis toujours surpris & impressionné après plusieurs retours.
Les poissons sont parfaitement préparé, avec un vrai savoir sur les poissons vieillis (nouveauté pour moi cette fois-ci).
Le service est excellent avec des serveurs connaissants très bien leurs produits & une attention aux détails sans être trop présent.
Enfin, les plats sont toujours parfait. Les saveurs sont balancées, les nigiri/sashimi très simples, brillent par l'onctuosité du poisson cru. Les chumakis & autres « rolls » permettent d'explorer des combinaisons plus fantasques mais sans cacher le goût central de l'ingrédient.

Food is probably some of the best nigiri anywhere on n the world. If you select only the house selection of the day you may luck out & get some incredible pieces of fish like us we had the collar of the blue fin. Just incredible & the wagu with the food gras is out of this UNIVERSE kudos to the sensei.
Mix up with the reservation & an over zealous waiter & they almost blew up our awesome experience. Otherwise this is a 5 star restaurant.Voir plus

They age fish & wagyu in-house, & charge a hefty premium on the aged pieces as compared to the already very expensive staples.
With interesting ingredients & aged meats, I was really looking forward to the meal. Overall, I had nothing bad, but It's not really the sushi experience I hoped for. Everything was smothered in fragrant sauces & toppings, taking away from the delicate flavours of the component ingredients & the star proteins. If I had gone in not expecting sushi, but a Japanese-fusion crudo experience, i probably would have felt better. At the same time, I would not have ordered the premium cuts.
Sitting at the counter with the meat aging fridge right in front of me, I could not pass up a chance to try some. We ordered the aged otoro sashimi, which came topped with some caviar. It was probably the best dish of the night, as it had the least added sauce/seasoning. It was not the richest otoro, & I could not discern any difference in texture or flavour from non-aged, but it had a nice bite & flavour all the same.
We tried several different nigiri. This was where the sushi-disappointment set in. The rice was really heavily seasoned, almost like a sweet teriyaki, & every piece of fish was first slathered in strong sauce & then covered with pungent toppings. The unagi was ok, as the Smokey flavour of the Bonito topping complemented the eel, & you are expecting a sweet & saucy bite anyway. The chutoro was the least sauced, but was also the least fresh tasting of the fish.
In the rolls, we ordered a vegetable & pickle roll, a tuna roll, & a crab roll. The veg & crab were in a soy skin instead of nori, which didn't have much flavor & had an odd texture. The crab was probably my favourite of the three, as the meat flavour went well with the very sweet sauce.
The staff were all very nice & very helpful, & service was relaxed & low pressure, which I appreciated.
At well over $400 for two, where I left still hungry, I highly doubt I will return. Sad because the ingredients have so much potentialVoir plus
I think this was the best sashimi & nigiri I have ever had! The fish was phenomenal. It was so tasty & fresh & almost melted in your mouth. All of us really enjoyed the meal. The atmosphere is really nice very quaint & the service was fantastic.Voir plus
This is hands down the best sushi I've ever had! We went with the Chef's choice for both the Sashimi & Nigiri, & it was the perfect decision. Every bite was packed with incredible flavour & absolutely delicious. We also tried the Salmon Tartare Maki & Tuna Tartare Maki, which were both outstanding. The service was top-notch, with knowledgeable & friendly staff. I'll definitely be back. After this experience, I don't think I could go back to regular sushi! It's a week after my meal here & I'm still thinking about the nigiri I had there. We got the 12 piece nigiri & each piece had its unique flavours. It's not the typical Japanese sushi you get with just the fish & rice. They had special toppings on it to enhance the flavours. We also got an off menu nigiri that had toro & Hokkaido uni . THAT piece, if available is definitely a must have. It was about ~40 for 2 pieces. Atmosphere is very modern yet a hint traditional. It's great for dates.Voir plus
This is definitely the best place I've visited for sushi. Nigiri are their specialty. Their menu is expensive, but it is justified by the top-notch quality of all the ingredients. Everything I tried was simply delightful. All the plates were incredible. These were the best nigiri I ever tried. Everything was memorable. But the O-Toro nigiri was the highlight. It stood out from all the others. I will never forget the taste... Simply outstanding! The Tuna tataki was insanely good. The maki were also very good. The waiter's knowledge of all the plates & drinks was very impressive. It is obvious that the whole team is professional & offers an incredible service. The inside was beautiful & the atmosphere was very cozy. Desserts were also good. I will certainly come back to try out their other nigiri! Sushi Hidden Fish Beautiful, Elegant, Elevated. A Truly impressive sushi experience, I heard great things but was not prepared for the level of skill, incredible taste & freshness. The decor is a notable highlight, large selection of imported Saki, they have a private room upstairs for larger groups as well, equally beautiful as the rest of the spaces. The Nigiri was my favorite, 6 assorted pieces.. spoke to the waiter & asked for another round & it came out completely different the second time, which was an amazing surprise! the Blue-fin tuna was my favorite. I tried the Uni, the Waygu Beef & a couple other unique rolls, All perfect. Overall the experience was one for the books, I will surely be back & with more colleagues. Thanks for having me. It was a perfect night-flavorful, top-notch service, & a great vibe. We went with the chef choice & had no regrets. Our waiter kindly explained all the fish. I've rarely written a bad review ever but this place deserves one. Food & service were so underwhelming compared to the value you're getting. This restaurant ruined my last meal of my Montreal trip. If you're out of town & looking for a good sushi spot, save yourself & just go somewhere more affordable with better sushi. We have had many good sushi/omakase in the past & even had them in Japan. So trust me, when I eat a good sushi, I know it's good. We came to this place with high expectations & were willing to splurge on good sushi since they had a good google review. However, our food was so underwhelming. We ordered scallop sashimi - so mid compare to the price we paid, Crab Maki - so mid. It was our least favourite dish & the portion is so small for the price. Chef's choice nigiri - we had high hope for this since it was a whopping $88 for 2 people (12pieces). It was okay, some was good, but it wasn't anything amazing at all. Considered the price, it's not worth it AT ALL. The service for a high end restaurant is also really bad. We ordered only 3 dishes, but everything took over 30 mins to arrive. The last dish, took 1.15 mins to serve which was INSANE. In addition, Nobody really checked up on us until the end of the night. Even more affordable restaurants had a better service than this place. Again, I wouldn't trust these google reviews at all. If you want to have a good night with reasonable priced, & higher quality sushi, please look elsewhere. Incredible sushi & exceptional service. The fishes & wagyu are aged & melts in your mouth. A good selection of sakes that pair well with both fishes & beef. We were kinda undecided so our server recommended Salmon Noodles, Sashimi Premium (24) & Nigiri (12). It was a bit too much of (raw meat) for two of us, honestly not a big fan of Salmon Noodles. Every dish was exquisite. We were going to cancel our reservation because we had a flood at home from the big storm but we would have been charged $50 for canceling 24 hours before. We weren't happy about that & kept our reservation. In the end, it was a much needed culinary escape from our troubles & we thoroughly enjoyed our cocktails & courses of sashimi, nigiri & makis.Voir plus

She was fairly new (3 weeks) but had an amazing command of the food & gave great recommendations!❤️ the Chefs made some of the best Nigiri I've ever had... & the twist on dry ages meats was incredible! HO. LEE. SH*T... I'm a huge foodie. In my 12+ years of eating fancy, I have never teared up from a single bite of food. This was not an emotional - I'm so lucky to be here - thing, it was a physical response to how mouthwateringly decadent some of the nigiri pieces were. WOW! Wilson was a treat to us as well, really enhanced the experience. TL;DR - if you're looking for the REAL DEAL, this is the spot. Otoro, wagyu, do the thing. PS: I was a roll guy before this. Sushi délicieux, c'est certain. Ceci dit, on a pas trouvé le citron dans les nigiris & makis à notre goût... C'est la première fois pour nous que le citron a autant été "en vedette" dans du sushi. C'était un peu accablant. Aussi, ce fut une mauvaise expérience de commande en ligne / cueillette au restaurant. Pour ce qui suit - TLDR: le repas était prèt à ramasser longtemps avant le temps indiqué... J'ai voulu placer une commande au téléphone mais lorsque j'ai appelé on m'a dit que les commandes doivent absolument être fait en ligne. Lorsque j'ai demandé pour une idée en terme de temps, on m'a dit 45m à 1h, mais que le système donnait le temps exact. J'ai placé ma commande à 19h50 & puis le temps pour aller chercher la commande était supposément 21h36. Un peu long, mais on avait tout choisi déjà, & ça avait l'air très bon... Finalement, je me suis pointé là un peu tôt, soit à 21h10. Ma commande était déjà prête - du sushi très dispendieux laissé à la température de la pièce pendant, je soupçonne, très longtemps. Je n'ai reçu aucune notification que ma commande était prête. Lorsque je leur ai dit que c'était plutôt inacceptable pour un restaurant de qualité, l'hôte a plutôt blâmer le système qui accepte/gère les commandes puis que c'est en effet impossible d'envoyer un message au client pour leur informer que leur commande est prête. Il a finalement accepté de passer le mot au gérant après que j'ai insisté. Pour vous donner une idée, la soupe miso était rendu froide à 21h40 lorsque nous avons manger notre repas. EDIT: oui c'est vrai que ma marche de 5 minutes dehors aura pu refroidir la soupe, ainsi que le délai de coucher nos enfants dans la chambre d'hôtel avant de manger. & oui, une période de grâce de 10 minutes est certainement essentielle pour n'importe quel établissement qui fait du takeout. Par contre, on parle ici de minimum 26 minutes avant le temps designé, fort probablement plus que ça. Mon point est que vous devrez adopter un système qui permet aux clients de suivre de plus près leur commande. J'aurais beaucoup apprécié recevoir une mise à jour que la commande serait prête en fin de compte plus tôt que prévu, ou au moins une notification lorsqu'elle était prête.Voir plus

(Update Feb 2024) .... Awesome experience. We had an early reservation 5:45 & had Matthew as a waiter he was excellent. Explained everything & provided a lot of great suggestions. I'm gluten free so he helped me navigate everything that's gluten free. We have (3) different types of nigiri & (3) rolls. Favorite roll was the torched albacore. Great experience highly recommended Really great!! Would love to come back, Florence was our waitress & she was excellent. Sushi was unreal & they accommodated gluten free so well with no problem!
