About

Soufflé specializes in the precise preparation of delicate, aerated egg-based desserts that define the core of its pastry program. Each preparation requires meticulous temperature control to achieve a signature structural rise before serving. The menu emphasizes traditional French techniques paired with seasonal fruit coulis and tempered chocolate ganache additions. High-quality dairy and farm-fresh eggs form the foundation of these light, cloud-like structures that collapse gracefully upon the palate. Patrons encounter a focused environment where the culinary process remains centered on the fleeting perfection of a single, freshly baked item. Consistent texture remains the priority for every batch produced within this specialized facility. This establishment maintains a rigid commitment to the integrity of its soufflé craft through constant monitoring of internal oven conditions.

Review Summary

Soufflé offers a range of high quality, light, and airy Japanese style cakes that are consistently described as delicious and satisfying. Many patrons appreciate the rich flavors of toppings like chocolate and caramel, often noting that the cakes are refined and indulgent. While the service is frequently praised for being welcoming, speedy, and helpful, some experiences have highlighted inconsistencies regarding staff attentiveness. Overall, the atmosphere and the product quality make Soufflé a popular destination for those seeking a unique dessert experience in the city.

Uncle Tetsu has had a monopoly on Japanese Cheesecakes in downtown Montreal for some time. Nice to see a challenger step up to the plate. The toppings don't seem too necessary, quality of the product stands up well on it's own. In comparison to Uncle Tetsu, these cheesecakes are ever so slightly more dense & rich, but it's a marginal difference. Service was great.

We bought a hole cake with 2 kind of toppings. One is caramel with pistatio & another one is chocolate with coconuts & berries. Both of toppings are good. I have tried this style of cheese cake of uncle Tetsu. I liked here more than there. It's good option what we can add some topings here.
We finished a hole cake by 2 people though it was for 3-4 people.

It's really tasty with satisfying texture (like, creamy but without being sticky).
However, I wish they would do like Uncle Tetsu & other bakeries by taking the tax exemption for regular/large size cakes.

EDIT: I wish that they would tell their customers (on the menu) that the larger size is un-taxed; of course I would order more if that was clear.
