Le pain est un produit avec peu d'ingredients, donc n'importe qui peut constater les subtilités du choix des ingredients, & de la technique GUILLAUME apporte le même souci du détail & la même absence de compromi qu'on peut s'attendre d'un restaurant étoilé, mais dans un artisanat qu'on peut raisonnablement apprecier à chaque jour.
Amazing chocolat chip cookie! The dough is soft & moist, the chocolate is high quality. The dough to chocolate ratio is also perfect in my opinion, you can taste the actual cookie, not just the chocolate. Easily in my top 3 cookies!
Walking into this place, I immediately got distinct'asylum cafeteria' vibes rather than'cozy neighborhood bakery.' The decor was so frigid, modern, & aggressively metallic that I half expected my baguette to be served by a nurse in scrubs.
Now, let's talk about the so-called baguette. I was looking for that classic, airy masterpiece with a crust so crisp it crackles on command. Naturally, I went straight for the'coude'-the ultimate litmus test of bread making. Instead of a satisfying, effortless snap, I found myself locked in a high-stakes wrestling match with a baked good. This thing had the structural integrity & chewiness of a thick rubber hose. I'm entirely convinced I could have folded it in half & used it as a bungee cord. It didn't break; it just defied physics.
As a self-respecting bread enthusiast, I did the only logical thing: I left the rubber weapon on the counter & walked out. But the comedy routine didn't end there. Despite actually paying for this architectural hazard, I was chased down the street by an employee accusing me of grand theft dough.
Because honestly, if I were going to risk a criminal record & sully my good reputation, do they really think it would be for a piece of vulcanized rubber?

This bakery is a must-visit if you're in Montreal. In fact, it's almost a pilgrimage for bread & pastry lovers. We picked up olive bread, potato bread, a sourdough bâtard, almond croissant, mushroom brioche, & a few other items. every single item was absolutely delicious. Everything tasted divine!
Our visit was made even more memorable by Guillaume himself, who served us personally & took the time to chat with us & explain each product. We can't wait to return. Thank you, Guillaume, for making our experience so enjoyable & worthwhile!
The choco stuffed pie at the cashier is extremely delicious! It looks coruscant but covered with chocolate. I will buy again. Very affordable. The cheapest actually
