Outstanding Italian restaurant. Creative food & an extensive Italian wine list. Attentive service, friendly but not familiar. We always make it a point to visit this restaurant when we are in Montreal.

I had dinner at Bis with 3 longtime friends last night. We were well received & appreciated the cozy ambience on a winter's night.
For cocktails, my friends ordered Martinis & a Campari whereas I initially ordered a Mint Julep. The waiter did not know what a Mint Julep was. Seeing as though there is no bar, I decided to order something simple, a Godmother, a straightforward mix of vodka & Amaretto which I had to explain how to prepare.
When the waiter brought me my drink, he said « Here is your weird drink » I assumed this was meant as harmless ribbing, meant to be funny & so I politely smiled.
Things took a downright offensive turn, however, when one of my friends extracted a hair from her mouth after her first bite of a tomato from the antipasti platter we ordered. When she signaled the presence of the hair on our dish, the waiter replied that everyone in the kitchen had short hair - he left & came & asked "if" we wanted our dish exchanged.
Of course we did.
In the meantime, the manager came over to see us. As I saw him approach our table, I assumed he was coming over to apologize. Instead, he merely reiterated that "everyone in the kitchen is bald".
At this point, I was ready to leave as any restaurateur with a modicum of class would have simply apologized & removed the dish immediately, without question. The four of us were offended by the insinuation that was embedded in the insistence that the hair did not come from the kitchen staff.
Nonetheless, we proceeded with our meal. The food was decent. However, the waiter again scoffed at us, when my friend & I asked for extra parmesan on our lemon risotto with shrimp. He asked us "Are you sure you are Italian, because no Italian would put cheese on seafood!" By this point our patience for ribbing had worn very thin. While his comment is correct, lemon risotto contains parmesan as a core ingredient- the dish we were served was very creamy & so the extra cheese was not a affront to the shrimp which was mostly served already mixed into to the cheese broth. (The risotto itself was very good, served piping hot, but the shrimp element was overcooked.)
In a nutshell, the quality of the service was not congruent with the $500 we spent on the meal: I trust this feedback is received constructively so that future patrons may have a classier, seamless dining experience.
(I have taken the time to provide this review because I received an email requesting my feedback- a sign, at least, that on some level Bis cares about their patrons)
