Bienvenue au Candide !
Dès notre arrivée, on ressent un profond amour pour le Québec & son terroir. Installé dans une ancienne église, le restaurant dégage une atmosphère chaleureuse & apaisante. Tout semble à sa place. En cuisine, aucun bruit, aucun mouvement superflu. On sent que chaque geste est parfaitement orchestré.
Les tables en bois, les chaises, l'éclairage, les comptoirs, les fours chauffés au feu de bois… tout respire le terroir Québec.
On perçoit immédiatement l'immense travail effectué en amont : la recherche des meilleurs produits, les techniques de conservation, le respect des saisons. Dans l'assiette, chaque ingrédient retrouve son identité. On redécouvre le vrai goût d'une tomate, d'un légume, d'une herbe.
& le pain… impossible de passer à côté. Fait maison, avec une passion évidente. C'est un peu comme cette ex qu'on sait qu'on ne devrait pas revoir… mais à laquelle on finit toujours par revenir. C'est complètement addictif.
& il n'est pas la pour rien, vous ne voudrait pas laissé une miette ou goutte de sauce dans vos assiettes.
Nous avons aussi eu la chance de pénétrer dans le coeur du restaurant : son cellier & sa réserve. Vous n'en verrez ni photo ni vidéo. Certains endroits ne se montrent pas, ils se vivent. John nous a ouvert une porte sur son univers, son intimité & sa façon de penser. Un privilège qui n'a pas de prix.

The spicy margarita was the best thing I had all night, at least until I showed up. The Astros won, but you would be the real lucky one if you reached out to see if I am actually as fun as I look. Someone worth my time can figure that out.

Cela faisait longtemps que nous n'avions pas expérimenté un aussi délicieux repas, même si nous mangeons régulièrement dans des établissements qui se disent gastronomiques. Chaque plat était goûteux, réalisé avec finesse. Les portions sont bonnes, elles comblent l'appétit. Merci Candide, nous reviendrons!
To be honest, the food was delicious. (I especially recommend the asparagus entrée we ordered as an additional dish.)
However, even though I'm not a big eater, I was genuinely shocked by how small the main course was. I would honestly rather pay a little more if it meant receiving a more reasonably sized main dish.
The plate itself was also so small that I initially thought it was another appetizer rather than the main course.
Other than that, the service, the atmosphere, & the wine selection were all excellent. Overall, I had a very enjoyable experience, but I do hope you'll consider increasing the portion size of the main course.
Clean & comfortable spot with very welcoming & attentive staff. Everything is sourced from Quebec, & the menu changes every month. We enjoyed the four-course menu very much & had a great experience.
Loved Candide. Location is great - in the middle of a park, cute patio on a beautiful day. Magalie & Jeanne were great, very attentive & helpful. Great QC wine recommendation. Food was fun & delicious, I especially loved the fresh house made buttermilk cheese in a courgette for the cheese course at the end. Definitely recommend 😊
What a hidden gem. I stumbled upon this place by chance & was completely blown away. The combination of local ingredients & skilled preparation makes for a truly elevated meal. The lighting & acoustics create a very comfortable environment where you can actually hold a conversation. It is evident that the team here cares deeply about their craft & their customers. The prices are fair considering the quality of the ingredients used. I highly recommend making a reservation as it fills up quickly.
Honestly one of the best dining experiences I have had in a long time. The tasting menu was a journey of flavors & textures that felt very cohesive. I loved the minimalist approach to the decor, as it allowed the food to really take center stage. The staff took the time to explain each dish, which added a nice personal touch to the meal. It is refreshing to see a business so committed to high standards of excellence. I am already looking forward to my next visit to see what is new.
