Reviewers describe Nouveau Palais as a nostalgic, no fuss spot with great burgers, crispy fries, and simple drinks, where the burger patties are juicy and well spiced on buttery brioche buns and the fries are standout, while the music and atmosphere strike a balance between lively and laid back; service is often praised as attentive and suave and the overall vibe suggests good value and a place to return, with notes about a lively bar scene, occasional loudness, a ricotta beignet option, and a Monday margarita special that adds to the draw.
Excellent service (classy, educated staff), good food. A coup de coeur, exactly as it was the case ages ago…hence the question: how do you keep doing that, mon beau NP? I guess that the answer is that they do not take anything for granted, because when I told the staff that they are still performing at the same level as back in the old days, they asked me if that was a good or a bad thing (a detail that is futile to a distracted mind, but that showed how they care to know as opposed to just take things for granted). It was a delight to find NP true to himself: the same interior of yesterday & always, the same good food, the same excellent service (& perfectly bilingual, BTW), the same careful sourcing, that same great old soul that their staff keep cultivating across the years. Consistent, you are, my dear NP, & those in the know, they know that is not a light feature. Long Live NP!
J'y ai mangé un des meilleurs burgers que j'ai goûté! Le décor nous donne l'impression de revivre la fin des années 70, ambiance très intéressante, bonne musique, très bon service.
Updated 2025: I just had the best burger in town by accident. The fries smelled delicious but I decided it would be worth the full meal. The meat was so well spiced, juicy & thick patty on nice buttery brioche buns, & fantastic crispy fries. I usually can't finish the fries & take them home for bad leftovers but this time I cleaned the plate. $7 margaritas special on Mondays drew me in but I stayed for food & left with a bill just under $50 all said & done, happy & full. Grand slam, compliments to the chef.
Original 2017 review: Great music, simple drinks, no fuss dive. Five stars.

Oh hell yeah! Want to eat till you burst? You won't be dissapointed when you order the waffle, the crêpe, the meat, the burger... & the people there? They are in love with their job. I can help it to praise them! Service > = Food
Boy oh boy what a burger! I read somewhere that this place had 1 burger on the menu & it was a burger everyone needed to try & I can confirm that it was a really really good burger. Perfectly seasoned, one of the best burgers I've had in Montreal & I've tried many at some of the top burger joints across Montreal.
Located on Bernard/Parc, a.k.a. the epicentre of hipsterdom, Nouveau Palais, stands proudly amongst more, shall we say, facelifted businesses, as a pillar of sentimentality to ‘what once was’ &, more importantly, as a pleasantly unpretentious, low-key, little den of homestyle cookin’ (with cocktails).
