Bouillon Bilk is a beautiful fine dining spot in downtown Montreal with a modern & elegant interior design. The ambiance was perfect for a relaxed & upscale meal.
We highly recommend making a reservation in advance, as it's a popular spot. While they offer a tasting menu, we weren't too hungry, so we ordered one appetizer & one main course each & both were absolutely delicious.

We booked a table ahead. We were a group of three.
We all ordered the 8 course tasting menu. I also ordered the 7 discovery pairings. The 8 course tasting menu was supposed to be for people who came after 8pm but they made it available for us even though we were there quite early (5.30pm).
Absolutely loved each course! They all have rich flavors. The mushrooms were really tasty, with the right amount of crispy. Among the first five courses, scallop & quail were my favorite. For dessert, the cucumber ice cream was really refreshing. Definitely recommend! For the discovery tasting, I love the last ice cider the best. Fruity flavor but not too sweet. This restaurant offers more than just a meal, it is an experience catered by professionalism & care. Meals are given special attention & thought in their design & presentation. Regardless if you appreciate the flavors presented to you it is a feast for all the senses. We made reservations at Bouillon Bilk ln the same day on a weekday & we are so happy we went! The interior is dim so if you have poor eyesight, you might need to use your phone for it's brightness. The menu says 8 course is from 8pm onwards but we were told that because it's a weekday & not too busy, we could do the 8 courses. The appetizers were delicious & made us very excited for the mains. The cod was so good & flakey. It was cooked perfectly & the flavors were amazing. The lamb was my husband's favorite. The duck is duck breast & a duck heart. I've never seen duck heart served in a restaurant before so that was very interesting. It was actually more tender than the duck breast! The green apple dessert was tart & definitely a palate cleanser. The pear dessert's sorbet component was a big hit. It was light & full of pear flavor. We were celebrating our anniversary & Bouillon Bilk was kind enough to put candles on our dessert. The staff are very patient & kind. Highly recommend Bouillon Bilk!!View more
New location is a let down. The food changed from the previous location. The food was overall lacking in flavours & missed the wow factor they used to have before with the modern french fusion. The most memorable dish was the duck with the extra foie gras (the extra is recommended), thought the duck was not tender which made the dish as a whole disappointing, the foie gras poêlé was a huge hit. The service was very slow while the place wasn't very full. They we're probably understaffed, we did notice that they grouped up often at the bar just to chit chat. Beside that, the waiters were very keen to details & helpful when you were able to get a hold of them. My experience at the restaurant took 2 hours & 30 mins, the 5 courses were served over the span of 2 hours. The atmosphere is very quiet & the decor is very modern, it gives out a very classy & delicate feels to it. Pre incident that forced the first location closed, this restaurant used to be in my top 3 restaurants in Montréal, unfortunately with the reopening, it fell down my list & I wouldn't recommend this place anymore.View more
The new space is very beautiful, tall ceilings. Very open airy space, a little dark but goes with the ambiance. They offer tasting menus (5 or 8 courses) as well as a La carte. As it was a special celebration, we went with the 5 course tasting menu. Just a note, the 8 courses are only available after 8 PM. The food was beautifully plated & extremely tasty! Also we were all shocked with the size of the plates. With some other restaurants, their testing menu plates can be pretty small. But here, they were generous! We definitely did not leave hungry! The lamb filled cappellini was so good, it came with mushrooms which my boyfriend hates. But he actually loved these ones which is saying A LOT! The duck was super flavorful & tender. The sauce was amazing! I am missing the picture of the dessert, which was squash-based. Standard Asian compliment for dessert: not too sweet! Lots of different texture elements making it a real treat. The service was excellent. Very attentive & polite! It was a pleasure. This place hasn't disappointed! Last time I visited was 5 years ago & this meal was even better! Definitely recommend for a special occasion!View more
Have you ever been excited to go to a restaurant because of its reputation & then have been a little disappointed? That's how I felt about Bouillon Bilk. The food is good - notably the beef carpaccio style appetizer & the cappellitti were phenomenal. While I felt like the scallops & tuna were good- they lacked a little "je ne sais quoi". However, the reason for the 4 star really came down to experience. Unfortunately, no quality check was done for any of our meals & the runners were going over the dishes so quick as if really trying to get the job done as fast as possible. I will still recommend bouillon bilk - the quality of the produce is top notch & the wine selection is great!View more

This is one of the best tables in Montreal & I stand by it - I've been dining at Bouillon Bilk for almost 10 years. If you like scallops, their version is a classic for a reason. Always perfectly cooked & paired with seasonal vegetables. Keep the bread to pick up all the delicious sauces that come with the dish. All the other entrees & main are good, creative & beautiful to look at. The service is premium - I never got a bad wine pairing with my meal. I highly recommend!View more

This is an excellent restaurant. I highly recommend it. Here are my personal impressions for your reference: As soon as you enter, the front desk efficiently & courteously greets & seats you. The waitstaff promptly arrives to introduce the dishes in detail & helps indecisive guests choose their meals. Each dish is briefly introduced when served. Every dish is exceptionally delicious & meticulously prepared, & it's evident they strive to ensure the temperature of the food is just right. This is quite impressive. The waitstaff seem to have a sixth sense-they can anticipate your needs when you look up or stand up & immediately offer assistance, even without needing to make eye contact. This left a strong impression on me! At the same time, you don't have to worry about the staff being overly enthusiastic & interrupting your conversation. They generally remain in a quiet standby mode, closely observing the guests' movements. Overall, this is an excellent restaurant with delicious food & an enjoyable dining experience. Finally got to try their 8 courses tasting menu & loved every part of the experience! Service was top notch, absolutely nothing to complain about - thank you Isabelle. My nut allergy was well accommodated. Food was not only visually pleasing but delicious. The ingredients tasted fresh. My favorite was the cappelletti & my husband's was the lamb tartare. I had ordered the 5 course tasting menu + non-alcoholic pairing. The food was in general good. Starting with a small basket of bread & butter, & then came a variety of flavours such as crab, veal tartare, pasta, beef, finishing off with a chocolate dessert. The non-alcoholic pairing was a nice surprise, & the pairings ended up quite interesting from a mocktail, to dashi, to a smoky kombucha. The service was good as well, the servers explained the menu very well, & were very quick about cleaning up the table & preparing you for the next course. The reason I give this a 4 star instead of 5 star is that for the price of the meal at about 200 dollars per person (5 course + drink pairing) I do have an expectation that it'd be not just a very good experience but a great &/or excellent experience. A couple of things stood out to me in this regard. The starter bread came with butter, however the butter was still quite cold (& perhaps a little frozen). & when the butter is that cold, you end up destroying the bread as you attempt to spread it as I did last night. Plus you can't get an even a spread. That was a bit of a disappointing start. I found the cappelletti to be quite salty. When you have a dish like this, & try to get a little bit of everything in one bit such as the cream sauce, the bacon bits, the taste felt just salty (with a hint of richness from the sauce). A minor thing, but I noticed there was a coat check. I'm not sure if it's offered to everyone but did notice some people use it as the service staff had retrieved it for them. I think if coat check if available, then it should be offered to anyone who has one. It wasn't a big deal as I just put my coat on my chair, no big deal. But one of those things where it'd be a +1pt for service if it was offered. Overall, I liked the food, it was good. The service was friendly & fairly fast. But for the price point, I really wanted it to be & expected it to be really great (& I think it's almost there!). Even so, I'd recommend people to check this place out.View more
