First two trips were 5 stars & the third one about 3. The new dishes (fish over gnocchi & veal) were disappointing. Too much salt & sauce but not flavorful at all. The dish for the veal was cold so the food got cold quite quickly. They wanted to remake it but we were already quite full after a couple of bites. Got a dessert for free for the disappointing experience. Though I had hoped I ordered our usual choices instead.
Edit: our 4th trip was pretty good (though I didn't like the ravioli as much. The lobster vol-len-vaut dish was very very good, not sure that was the right spelling though).View more
A truly unforgettable experience! Credit to the front of house & kitchen teams alike. Party of 5 adults eating the 5 & 8 course tasting menus, with discovery & traditional wine pairings. Each course was delicious & well presented. Staff were extremely welcoming & knowledgeable about dishes/ingredients/wines. The atmosphere was classy. BOUILLON BILK was nothing less than spectacular, from start to finish
Every single plate (we did the 8 course tasting menu) was full of flavour, rich umami goodness, perfectly balanced & tapered off towards the dessert. Will certainly come back when there's an updated menu.

Out of the 6 dishes that we ordered, one was outstanding (porc), 4 were good & one was mid. The service by Eric was great! The ambiance was nice; however lots of random people out the windows & shinny panels of Boustan, Subway, etc. Maybe darker blinds could be nice.View more
Our dinner was delightful. This was our first visit at the new location after many visits at the previous one. We were happy to see that the menu had many of our favorite dishes from the previous restaurant - specifically the eggplant & scallops (both pictured). The ambience of the new location certainly matches the food better than the old space did. The service was very attentive & warm. The sommelier recommended an excellent bottle of wine with our meal for my wife & I. Every plate was perfectly prepared & delicious. & the staff was even quick to change our table, at our request, when the neighboring table had a baby (who brings a 2 year old to a fine dinning restaurant for dinner?). Have you ever been excited to go to a restaurant because of its reputation & then have been a little disappointed? That's how I felt about Bouillon Bilk. The food is good - notably the beef carpaccio style appetizer & the cappellitti were phenomenal. While I felt like the scallops & tuna were good- they lacked a little "je ne sais quoi". However, the reason for the 4 star really came down to experience. Unfortunately, no quality check was done for any of our meals & the runners were going over the dishes so quick as if really trying to get the job done as fast as possible. I will still recommend bouillon bilk - the quality of the produce is top notch & the wine selection is great!View more

What an excellent dining experience! We did the 8 course set with a non-alcoholic drink pairing as well as the Canadian wine pairing. Almost all of the non-alcoholic drinks were fantastic (the mushroom kombu beverage was not good at all however) & the wine was expertly paired. The food was well thought out, beautifully presented, & had great flavours. It was contemporary but had classic but elevated flavours. Service was fantastic & the ambiance was okay. The food was the highlight of the experience, however, we would have opted for the 5-course instead of the 8-course in hindsight. The 3 additional dishes that we got as part of the 8-course were our least favourite (beets, trout, & chocolate). I would come back for a special occasion sometime. Prices are fair, & we left feeling quite full! 9.2/10!View more

This is an excellent restaurant. I highly recommend it. Here are my personal impressions for your reference: As soon as you enter, the front desk efficiently & courteously greets & seats you. The waitstaff promptly arrives to introduce the dishes in detail & helps indecisive guests choose their meals. Each dish is briefly introduced when served. Every dish is exceptionally delicious & meticulously prepared, & it's evident they strive to ensure the temperature of the food is just right. This is quite impressive. The waitstaff seem to have a sixth sense-they can anticipate your needs when you look up or stand up & immediately offer assistance, even without needing to make eye contact. This left a strong impression on me! At the same time, you don't have to worry about the staff being overly enthusiastic & interrupting your conversation. They generally remain in a quiet standby mode, closely observing the guests' movements. Overall, this is an excellent restaurant with delicious food & an enjoyable dining experience. Our most delicious dinner in Montreal. I am surprised that this place is not in the Michelin guide at least, since the serving dishes, taste & service are at a high level. & this is at relatively inexpensive prices. Scallops with shiitake, beef with snails & veal tartare were super delicious. I was just ready to lick the plates. I tried out the 5 course menu for 105 CAD & it was amazing amount of food! Unfortunately, I forgot the name of the waitress, but thank her so much for a wonderful evening.View more
Simply incroyable !! Found this restaurant specifically for my visit to Montreal & I am so glad I did! Beautiful artistry in the dishes & the wine pairings are to die for. Wish I had taken a picture of each & every one because I WILL be searching for them. The servers were so kind & accommodating & they incorporated all our wishes into the tasting menu. Absolutely the highlight of our trip. The food, service & atmosphere are all top notch. We ordered a La carte & enjoyed every bite: oysters, butternut squash ravioli, scallops, duck & clementine dessert. Each dish was prepared with the utmost attention to detail & incredible fusion of flavors. Our waitress described every dish prior to us ordering & when the dishes came, another explanation was given, which really allowed us to appreciate every bite. My husband & I went there for my birthday dinner. It was an amazing experience. We had their 5 course tasting menu. They were very accommodating & catered to my vegetarian needs. My husband had their usual one. Our server Natalia was very helpful throughout. They presented & explained all of the dishes very well. & we simply loved all of them. Bouillon Bilk is an unexpected modern take on a neighbourhood fusion bistro, located in a nondescript retail space on The Main just north of the Quartier des Spectacles. Although located between Place des Arts & the trendy part of Saint-Laurent where the beautiful people hang out, this stretch is, well, let's be honest - seedy. You'll quickly forget any notion of a romantic after dinner walk & quickly head to your car, lock the doors & drive off. However, if you can put up with the location, you will be rewarded with a wonderful dining experience.
The decor is clean & modern, with solid wood tables & real cloth napkins. (It's unfortunate there are no tablecloths as the menu prices certainly would justify them. Hmmmmm...must be part of that green movement where you pay the same but get less because it's better for the environment). Service is reasonably prompt, although we would have appreciated having some bread to munch on a little sooner. As well, our waiter was a little too interested in the goings on of neighbouring tables while mechanically listing the day's specials. A little more focus on his clients (us) would have been warranted. We'll nonetheless excuse the staff, as the place was absolutely packed on the Friday evening we visited.
The menu features a limited choice of appetizers, mains & desserts - about six in each category - plus a few daily specials. Most dishes are what I would call Continental Fusion, a combination of the best ingredients from European & Asian cuisines. We tasted about half the menu & no one was disappointed. The tagliatelle with rabbit were exquisite, the scallops were tender & succulent & the guinea fowl with vegetables was heavenly. The wine list is ridiculously long (over 100 selections - all private importations we were told) & has something for everyone & every budget.
We measured the noise level at an average of 78-80 db with an audiometer during our meal on a very busy evening - which is on the high side of comfortable. One notch lower would have been perfect. This is not the place for a romantic dinner date, but rather for foursomes or sixsomes. Parking is available on the street. The bathrooms are clean & modern. Bouillon Bilk is a little pricey, but you will taste original dishes that are attentively prepared.
