For food lovers seeking original flavors this holiday season, Ibéricos, the Spanish tavern on St-Denis Street, offers a unique culinary experience. Chef Haissam Souki and his team have created three tapas that blend tradition with innovation.
The Ensalada Ibéricos, the restaurant's signature salad, features Brussels sprouts prepared two ways, dehydrated Iberian ham, manchego cheese, dates and almonds, drizzled with maple reduction and topped with panko and pimentón de la Vera.

The Berenjenas Fritas deliver a satisfying crunch with thinly sliced marinated eggplants, garnished with yogurt, buckwheat honey, feta cheese, and lemon zest.

The Pulpo Asado showcases Spanish octopus cooked sous-vide and then grilled, seasoned with pimentón de la Vera and a secret Basque mojo sauce, served alongside samphire and creamy mashed potatoes-a true tribute to the flavors of the Cantabrian Sea.

For a complete holiday feast, Ibéricos recommends following the tapas with a shareable Valencia-style paella and finishing with a Basque cheesecake and caramel flan. Drinks include Inedit beer, a collaboration between Estrella and renowned chef Ferran Adrià, as well as a curated selection of Spain's finest wines.
