It has a light, pillow-like texture that almost melts in your mouth, striking a nice balance between a soufflé & a traditional cheesecake without being overly sweet or heavy. Small shop with limited availability, so if you want cakes you should come early in the day because they often sell out, & by the evening only a few items are left. I tried the cake & it was good, but I usually come here for the cheese tart-it's really good & definitely my favorite.

We tried the matcha, original, & chocolate cheesecakes from Uncle Tetsu & honestly, each one had its own kind of deliciousness 🍰

The texture is so light, fresh, & soft, & you can really taste the quality in every flavor. The original is classic & comforting, the matcha has a perfect balanced flavor, & the chocolate one is rich without being too heavy 🍵🍫

Definitely worth trying if you love fresh & fluffy Japanese-style cheesecakes 💛
