Restaurant Parapluie emphasizes a market-driven approach that highlights fresh seafood and seasonal aquatic ingredients. The kitchen prioritizes precise techniques to transform raw ocean harvests into creative, flavor-forward compositions. Menu offerings shift frequently to reflect current market availability, ensuring that every prepared dish showcases peak freshness and textural integrity. The dining environment maintains a functional, straightforward layout designed to focus attention entirely on the plated components. Each preparation integrates subtle vegetable pairings and bright acidity to elevate the natural characteristics of the fish. This culinary focus creates a direct link between the sustainable sourcing of marine life and the final presentation delivered to the table. Patrons experience a concentrated exploration of coastal flavors that celebrate the diverse utility of local, high-quality seafood within a modern culinary framework.

On était 4 personnes.

Came here for the tasting menu but they don't offer it to solo diners. However, they do offer a mix of their ala carte menu in smaller portions instead.

I tried the signature lobster & eggs, tuna, trout in Montreal bagel style & the panna cotta. All of them were superb. I've had plenty of lobsters in my life & it's hard to make a lobster dish stand out, but they absolutely hit it out of the park with what they did here. The sauce was well-balanced & the lobster was beautifully cooked.

The trout was also very creatively inspired by a deconstructed bagel. It seemed like an odd mix at first glance but the sesame seeds, scallions, roe & white sauce all came together so beautifully.

Last but not least, service was slow (they were very busy) but the servers were all super kind. This has also been the only restaurant in my life where they charged me the subtotal (not the post-tax amount) on the machine for a more honest calculation of the tip.

Bravo on all fronts - will be back the next time I'm in Montreal.

I am pleased to have picked this place to celebrate our anniversary. I can't recommend enough booking a bar seat if you love a kitchen view as much as I do. I really loved the space & the decor, it was so intimate & charming. The food is absolutely astonishing. We savoured every dish with awe & amazement. The trout, scallop crudo & the egg+lobster are must-tries. The panna cotta we were offered was also divine. Speaking as someone who ordered à la carte, I found the prices to be very reasonable for the quality provided.

Let no one defraud oneself under veil of dishonesty: reaching from the middle to underwhelm. I highlight that this was one day, the mileage of others surely varies as demonstrated by the commentary: the day's tasting menu confusedly ran a rogue gambit of fish following fish with a slight interlude from half a boiled egg; the late meal amuse bouche teased a transition to the more savory only for a cushioned let down in...more fish. The wine recommendations & the service itself absolutely excelled beyond the kitchen, & for these two alone I can begin to understand why certain guides' highlights may not have been mistook in vain. The plating carries notes of indviduality, tastes leaning a tad garish on the side of ambitious, yet shattered by poor pacing. If this an oasis, a return surely warranted, but a mirage in such a neighborhood overflowing of milk & honey is but a parasol (though perhaps I did not pick up on the name as implying I would need an umbrella for all the seafood I would be eating).
