Exactly what I imagined for a small farm-to-table restaurant. Adorable, friendly, & just really good.
There are plenty of family-owned farms scattered around the Eastern Townships, but you rarely see a kitchen actually treating local produce with this much intention. Zero luxury touches. No traditional heavy proteins like beef or pork. It's not strictly fine dining, but the technical execution & delicate detailing on each dish was on par with some of the best high-end spots I've hit this year.
My favorite dish of the night was the raw turnips with a ramp-infused pork lardo dip. By whipping pure, unctuous lardo into an airy emulsion spiked with ramp, the kitchen created a pungent (& a tad spicy) bite that sliced right through the cured pork fat. & the aggressively crunchy slices of raw turnip was a perfect vessel & its high water content acted as an instant palate cleanser. Never thought I'd be raving about turnips as an opener, but it was one of the most memorable plates I've had in a while.
Another good hit was the grilled shallot with crab bisque & pickled rose. Instead of burying floral notes in a dessert, they pivot & use them to drive a savory entrée. The lightly caramelized shallot actsed as a sweet, jammy anchor for the umami of the crab. But what I liked the most was the pickled rose sauce. By weaponizing acidity to stabilize those highly volatile floral compounds, they stretch a fleeting, delicate blossom into a lingering savory backbone.
Seating was communal. They group random parties together at large tables of eight. It sacrifices a bit of the intimate, rustic solitude you might expect from a place like this, but I ended up meeting some incredibly nice locals. Highly recommend making the drive if you want an atmosphere that is completely relaxed but still ambitious.
I don't usually write review, but I needed to write one because they deserve it!! When I saw the google reviews, I thought that it was an outdoor pizza place. Dominique said it is during summertime! During winter they have beautiful indoor communal tables with the chef's tasting menu! They use ingredients from local farms, including direct from their own farm. Everything was so delicious & amazing!! Great beverage list as well. Thank you for all the effort to make this an unforgettable experience.
