About
Our approach to pastry-making is rooted in questioning. What role do ingredients play in the chemistry of a pastry? How does the body react to them? Are they truly essential? And if so, what natural foods can we substitute them with?
For ten years, we have avoided the refined sugar, glucose, and many other artificial sweeteners, colorings, and stabilizers found in numerous pastries and baked goods.
Initially, we used organic whole wheat flour, organic honey, local maple syrup, and organic cane sugar. Then, we sought to further reduce the amount of sweeteners, even natural ones, while creating more complex and pronounced flavors.
By combining nuts, fruits, vegetables, roots, spices, and herbs with our flours, we found our alchemy. Carrots, Jerusalem artichokes, celeriac, sweet potatoes, parsnips, nasturtium leaves, and more. The list of flavors and textures nature offers us is infinite.
In our shop, you will find croissants and baked goods with a rich yellow dough, made without eggs or refined sugar. Instead, they are sweetened with carrot juice and made with whole organic rye and spelt—resulting in a tasting experience that is crispy, airy, beautifully buttery, and mindful!
