August 20, 2026: Easily the best meal of our Québec trip, & the best dining experience we've had in a long time.
Impressions:
Tucked away just off Main Street, this cozy spot features a street-view dining room & a front-row bar seating area overlooking the open kitchen. The three folks working that night (2 of the 3 owners) seamlessly rotate between cooking, serving, cleaning (!), & chatting with guests-all while maintaining an infectious, joy-filled atmosphere.
Their dedication to local farmers, producers, & breweries shines through in every dish. While the preparations appear simple, the ingredients & technique create flavors that are complex & deeply satisfying.
What We Shared:
• Salade Tomate: Heirloom tomatoes, shaved fennel, house-made ricotta, melon, & a bright vinaigrette.
• Tuna Crudo: Fresh tuna paired with an incredible green emulsion (tomatillo, garlic, lime, cucumber, & chive oil). The sauce alone was worth the trip. Grilled homemade focaccia helped soak up every bit of that sauce.
• Courgette: Grilled zucchini with ventrèche (French pancetta) & green oil over a stunning ajo blanco sauce. Again, bread for the sauce.
• Poulet Frit: Tender, juicy fried chicken topped with honey-infused oil, chili crunch, lemon mayo, & fermented cabbage.
• Gelato & Granité: Olive oil gelato with local strawberry & rhubarb granita.
Exceptional food, fantastic energy, & a constantly evolving seasonal menu. I only wish we lived closer. Highly recommended!
Belle soirée à la buvette Shiso. Les plats à partager sont excellents, savoureux & variés. Coup de coeur pour tomates ancestrales, poulet frit & sucrine césar. Excellent service, les proprios partagent leurs coups de coeur & recommandations. Excellent rapport qualité prix. Nous y retournerons assurément!
I am not one to photograph my food, it feels like missing the point when you're actually sitting there. So I'm hoping my words can do justice to what I experienced.
There's something amazing about five skilled people in a small kitchen, genuinely invested in what they're making. You taste it in every plate. The fried chicken that actually melts, the grilled sucrine with its delicate char, the fish, the veggie pasta, risotto, tuna, fried corn, mortadella. Each one told a story of care & craft.
We sat at the bar watching the magic unfold, & while they cooked, the chef chatted with us-no barriers: genuine human connection.
The beignets at the end were like soft clouds & the Gelato was out of this world. The complimentary focaccia kept appearing for the kids. In a world of formula & rushing, this small team is doing something quietly beautiful. That's worth recognizing.
Holy peak ts is immaculate fr the people at the counter were super chill & the food was amazing. The vibe of this is place was so tuff 10/10 would recommend. Also the bread was amazing 🤤🤤🤤🤤🤤🤤🤤 gimme more fr.
De passage à Magog, nous avons passé un bon moment gustatif, avec plusieurs plats à partager, à la Buvette Shiso ! L'ambiance est intime & décontractée, le service est vraiment bien, attentionné. Mention spéciale pour deux plats : le crudo & le maquereau. Recommandation pour le dessert gelato/granité. À retourner !
