The Croissant Croissant adventure began in late 2015, driven by Matthieu Virloget, a passionate artisan trained at Ferrandi Paris, one of the most prestigious French gastronomy schools.

Guided by a desire to introduce Montréalers to the authenticity of French viennoiserie, he envisioned a concept centered around an iconic product: the croissant.

A few months after opening the first café on the Plateau Mont-Royal, Aurélie Baravian joined the venture, bringing her expertise in management and customer service.
