I recently tried their new signature dishes menu, which focuses on winter comfort food made with local ingredients and quebec specialties such as maple syrup, smoked salmon, and quebec lamb. The shephard's pie, which was made with sweet potato, braised veal cheeks, and caramelized onions was unbelievable. I have never seen or tasted anything like that! Not just another hotel resto, they are really trying to go above and beyond the norm!
