From July 9th to 13th, 2025, Le 9e invites Montrealers to step into a slice of Paris with a limited-time bouillon pop-up experience hosted in the iconic Art Deco Grand Hall on the 9th floor of the Centre Eaton de Montréal.
For just five days, acclaimed chefs Liam Hopkins and Derek Dammann will present a menu inspired by the beloved tradition of French bouillons: affordable, hearty meals originally served in 19th-century Parisian canteens. These simple yet flavorful dishes will be made using fresh, seasonal ingredients from Quebec.
Adding to the ambiance, live jazz and classic French music will be performed daily in one of the most beautifully preserved Art Deco interiors in the world, recognized as a heritage site by the Minister of Culture.
Reservations are required, and seating is limited. To allow as many guests as possible to enjoy the experience, each group will have a two-hour dining window.
