Mayhem. A word that means "chaos". A word that is often associated with negative connotations. So, the question is: Why "Mayhem"? "Mayhem" because it is an unpretentious word that describes the restaurant world perfectly. Traffic, noise, continuous movement, adrenaline, physical effort, mental effort, unforeseen events, rhythm, management, communication between the kitchen and the floor, errors, oversights, frustrations, laughter... in short, we will not hide it, it is a bit of chaos, but "good chaos". "Mayhem" because that's how things happen in my head. I sometimes wonder when does she rest that one? The answer is never. Just asking me to choose is difficult. I love everything, and I love too much. So many possibilities, so many ideas, so many directions.... how do you choose? Finally, "Mayhem" because our philosophy is to stay away from the conventional.
