Fish Bone focuses on the preparation of fresh aquatic proteins sourced directly from maritime suppliers to ensure peak flavor profiles. The menu centers on wood-fired grilling techniques that impart a distinct char while maintaining the delicate textures of various fish species. Patrons select from an assortment of market-fresh ingredients displayed prominently to emphasize the raw quality of the produce. The preparation methodology prioritizes simplicity by allowing the natural salinity of the sea to dictate the seasoning profiles. Durable surfaces and an open-concept layout define the spatial configuration, facilitating a direct connection between the culinary production and the dining area. Systematic attention to heat control and timing ensures that every protein retains its structural integrity during the transformation process. This establishment prioritizes the fundamentals of elemental cooking through rigorous technical execution.

Amazing experience at Fish Bone. The sushi was incredibly fresh & high quality, the atmosphere was upscale, & the music created the perfect vibe all night. Great service & an overall top-tier dining experience. Definitely recommend.
I've been here twice in the last month & both times were excellent. Shoutout to Sam for taking care of my party, we'll be back, the vibes are immaculate!
The floor to ceiling windows, antique plank flooring, minimalist furniture, & the 70s soul soundtrack give this place a cool comfortable vibe. As someone who is hung up on details, I appreciate that. Nothing is out of place here. The bus stations are perfectly organized. The furniture candles, glasses, flatware, etc. are symmetrically arranged.
The menu is bursting with creativity with interesting takes on Japanese sushi bar classics. There was also a selection of steaks & seafood options.
I was taken back by oysters that were served topped with fresh raspberries. It was a great idea. The acid from the raspberries worked as a subtle mignonette & paired well with the subtle brinyflavor of the oysters.
Black cod served with green beans & grilled white asparagus. Everything is perfectly cooked & seasoned.
Staff was cordial, attentive & interactive without being intrusive.
The negative reviews make no sense to me. It seems any past issues have been rectified. I've been in the business for several decades, & I can say that they hit every mark.
This was my second visit to Fishbone, & I'm just as pleased as I was the first time. The food continues to be top-notch, & the bar staff can accommodate nearly any request. Our waiter, Renzo, was exceptional-attentive, friendly, & made sure we had everything we needed. As always, the restaurant hosts incredible DJs, & this time DJ Fice really stood out with a versatile mix that kept the vibe going all night. I'll definitely be back!
I don't know why this is rated in the 3's... to me, should be at the minimum a 4.0. It is pricey, no doubt, so that may be where the lower rating is coming from, with all things considered. Service - 4.5/5 - Every waiter & waitress was so friendly & happy to serve. The only reason for a .5 star off is because the service was a little slow to initially take our orders; however, they could have been short staffed, so either way, still great service. Food - 4.5/5 - The rock n roll was AMAZING... & I JUST came back from Japan, so me saying this really means something. I'd say the price is the only downfall, in terms of its overall value. It is quite big for a sushi roll, but still. If it was $10, this would be a 5/5.. the lower rating is literally just because of the cost. Definitely order this if you are here though, you won't regret trying it. Ambiance - 4.5/5 - Great restaurant/lounge vibe, with a DJ that starts playing music later on in the night. It was really boujee & my friends & I all really enjoyed our food & time there.
I've been to fish bone more times than I am willing to admit. I've always loved it here. In previous years, I would come for the food, each dish was more exquisite than the other, & I would genuinely come for dinner as my main event. Sadly the last 2-3 times I've been, the food was really bland & disappointing :( wine options aren't too vast either. However, the service is incredible. Our waiter the last time we went was so attentive & friendly & positive, despite how busy it was. The vibes are super immaculate, it gets very loud on the weekends with the DJ & it's an overall such a fun time. The lychee martinis were so strong, we loved them! I would recommend this place for drinks & dancing, fun for even a girls night out, great music, but would skip on the food. Overall I'd definitely keep coming here :)
