Ceviche, ceviché, cebiche, sebiche or seviche are different names for this famous Latin American dish. 

There are many variations of this dish, but fundamentally, it is raw seafood or fish that is "cooked" in an acidic marinade, usually lime, and served cold. 

The origin is still debated, but many say that it would have come from Peru, which would have been inspired by Japanese immigration. Then, several Latin American countries would have adapted the recipe. 

Luckily for us, this dish has arrived in Montreal and many Peruvian, Mexican, Chilean, etc. restaurateurs have added ceviches to their menu.
