In 1934, with changes in the law, the upper floors closed, and Chez Delmo became a restaurant specializing in fish and seafood. This shift marked the beginning of a long history of success.
In 1964, the restaurant came under the ownership of Roland Périsset, a Swiss immigrant. He renovated the establishment, installing two 19-seat counters, which were among the longest in North America at the time. Under his direction, Chez Delmo became an institution frequented by bankers, politicians, lawyers, and other prominent figures from Old Montreal. The restaurant thrived at lunch and dinner, with a lively atmosphere and a loyal clientele drawn by the quality of the dishes and the unique ambiance.
However, in 2004, following Périsset's illness, the restaurant closed temporarily. It was acquired by the Holder brothers, who attempted to modernize the menu, but the effort failed, and Chez Delmo closed again after just eight months.
Chez Delmo's true revival came in 2011, when Benoît Dessureault and his partner decided to relaunch the establishment, returning it to its original spirit. They revived the classic dishes that had made the restaurant famous, updating the recipes with fresh ingredients.
The result was a resounding success: Chez Delmo regained its place among Old Montreal's top dining destinations.
