Did you say SAJ?
The SAJ is an old and prominent tradition in the villages of Lebanon, it is a curved metallic sheet on which the Lebanese bread, we call Markouk, is heated and cooked. The bread is almost as thin as a sheet of paper. The word “Markouk” literally means "thinned", it is also the lightest of breads. Many models of the SAJ exist, the professional kind; mostly electric, or the traditional, fire-heated kind.
The Lebanese man'ouche (Pizza)
It is thin, light, and stiff dough that must be flattened before baking; and on which ingredients like thyme or cheese are spread. It can be folded, rolled like a sandwich, or cut like a pizza.
Marqouq Bread (very thin) : The Authentic Lebanese bread.
Marqouq is a Lebanese term that means "rendu fin" or laminated. The Marqouq bread is prepared from dough by a Lebanese tradition on the SAJ. It is a “galette” of 60 to 80 cm in diameter, very fine (translucent). The “galettes” of the Marqouq bread may be stored for nearly a month, superimposed on each other, protected by a fabric, which can be occasionally hydrated.
