There are many variations of this dish, but fundamentally, it is raw seafood or fish that is "cooked" in an acidic marinade, usually lime, and served cold. 

The origin is still debated, but many say that it would have come from Peru, which would have been inspired by Japanese immigration. Then, several Latin American countries would have adapted the recipe.
