Following Chez Delmo's closing in 2005, the restaurant's team relocated at 275 Notre-Dame Ouest (the present address) to honour the traditions of this fish and sea food restaurant, well known for its success.

In June 2006, owner Simon Desjeans gave birth to his new project, called Le Nantua after a French village near Lyon, known for it's scampi's sauce which still appears on the menu.

In 2011, Le Nantua is sold to two partners from the flyer distribution industry, who decide to go back to the roots, rename the restaurant Chez Delmo, and redecorate the place. Most of the old restaurant's team is still in place, the menu is virtually unchanged, and the original stools named after Chez Delmo's most faithful patrons still stand guard around the brand new granit bar.
